Zucchinni Flower & Cake
As mentioned yesterday I was making a cake as having visitors this morning, well here it is, it was a hit!! As I can't offer you a slice I will give the recipe -
Zucchinni & Carrot Cake
2 eggs
1 cup sugar
2/3 cup vegetable oil
1 1/4 cup of flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 cup grated carrots
1 cup grated and drained zucchini
1/2 cup chopped nuts
Frosting:
1 250gram pottle cream cheese (softened)
3 tablespoons margarine
2 cups icing sugar
1 tsp vanilla essense.
Preheat oven to 350 deg F. In large mixing bowl, beat eggs & sugar until frothy. Gradually beat in oil. Add dry ingredients and beat at high speed for 4 minutes. Stir in carrots, zucchini and nuts. Pour into a well greased 9 inch baking pan. Bake about 35 minutes.
Frosting (yumo)
In a small mixing bowl, blend cream chees & margarine, add icing sugar and vanilla. Beat until smooth. spread evenly over cooled cake.
Enjoy & isn't the Zucchini flower rather nice too.
