Now butter beans and aubergine are controversial foods - it seems you either loath them or love them - well we love them. Whether its those gigantic beans in tomatoes in Greek tavernas or in your grannies stew, butter beans are the king of the pulses.
The perfect food in my eyes.
Aubergine - slightly gelantious and smoky with a richness from all the olive oil they absorb - a perfect match.
This in not high dining but comfort food at it's best.
Served with a salsa and some flat bread.
