Honey Glazed Roasted Vegetables

Today was a great food day. I introduced my oldest daughter to PB and J Sandwich Stand and she loved it! She actually ate hers faster than me, and I am a fast eater! Nothing like sharing things you love with people you love. So, I decided to carry that theme further and fix a roasted vegetable dinner for my husband. It's one of his favorite meals. I love eating it, but I love looking at it just as much. All those beautiful colors on one platter. Heaven!
