Mexican Thai...Thai Mexican

I'm not sure which way it should be described. Mexican Thai or Thai Mexican. Either way, it was delicious! I got this plate of enchiladas at a restaurant, but thanks to some friends and family, I now have my own taco and enchilada spice packets. I'm looking forward to cooking with the students soon.

It's interesting, in America we eat Thai food prepared by Mexicans and in Thailand we eat Mexican food prepared by Thais. And it all tastes great!
