Sugarcane to "Gur" (Raw Sugar/ Jaggery)
A local farmer shares hot fresh "Gur" (Jaggery) with us in the village of Shabra, Charsadda district, Khyber Pakhtunkhwa Province.
Juice was extracted from the sugar cane and concentrated in a 15-20 foot shallow pan. Lime was added for coagulation and to extract impurities. Once the sugar started to crystallize the content was scooped out and chilled in a flat pan.
