Angel's Share...

Did you know that scotch whisky is spelt without an e whereas American and Irish spirit is spelt with an e. I'm not sure if Scotland is the only producer to drop the e.

Did you also know that while malt whisky is maturing in oak casks for the 18, 20, 30 years or however long it's aged, roughly 2% of it evaporates into the air through the wood of which it is mostly alchol?

This is known as the angel's share.

Lastly, did you know that this is about as close as I'm gonna get to this earthly share until after my son or daughter is born hopefully around a month from now?
