Happy New Year

Yesterday we baked about a hundred 'kniepertjes'. These are sweet, crispy, rolled up waffles which are traditionally baked to welcome the new year.
Or to mark the end of the old year.

There are differences in taste (cinnamon or anise) and in form (flat for the old year, rolled up for the new year) depending on in which part of the north-east of the Netherlands (Achterhoek, Twente, Drenthe and Groningen) you are.

We do it the Achterhoek way.
