Admittedly I've only made a courgette soufflé a few times before, and they have all been great and fluffy. The last one was over a year ago however, and doing it from memory was not the best idea.
Taste: 8/10
Texture: 3/10
Overall: Tough one. As a soufflé ? 0/10. as a part of a meal? maybe 5/10.
