Salted Red Eggs
We finally got a day without any rain today and it seems typhoon Megi has finally moved elsewhere. I thought I'd walk around our town late this afternoon. First thing that catches my eye is this man on his bike selling salted red eggs. This is nothing like the balut that I blipped a couple of days ago. These are duck or chicken eggs that are buried in salt for a certain number of days until the salt permeates the inside and a salty flavour is achieved. It is then hard boiled and to differentiate them from regular eggs, they are coloured a scarlet red. These newly cooked ones are on its way to the city market. We usually serve them as an ensalada with onions, tomatoes, cilantro and a dash of fish sauce or vinegar. It is also a delicious side dish for our local cured meats such as tapa, chorizo or longganisa.
