Delicata Squash

Got this in our CSA bin and wasn't sure what to do with it - made the Delicata Squash Salad from 101 cookbooks. Had it with grilled mackerel - salad was tasty but I think the squash that we had was a bit big so it was sorta gummy when roasted. Will probably try to make it again sometime. Have 2 more waiting for me....what to do?
