Banoffee cupcakes

Made a batch of these for some visiting Yummy Mummy friends and their little ones today :))

Here's the recipe (makes 10 - 12 cupcakes):

for the cupcakes:
60g butter at room temperature
70g soft, brown sugar
1 egg
1 ripe banana, mashed
175g self-raising flour
50g chewy toffees, chopped


to decorate:
180ml double cream, whipped
3 -4 tablespoons dulce de leche
1 banana, sliced

Preheat oven to 180C/350F/Gas 4

Beat together butter and sugar until creamy. Beat in egg little at a time. Fold in mashed banana, then sift in flour and fold in, then fold in toffees.

Spoon into cases and bake for approx 15 mins until skewer inserted in centre comes out clean.

Decorate with swirl of cream, then a drizzle of dulce de leche, add slices of banana and another dollop of cream.
