Left overs...

Yesterday a friend came round with a large bag of left overs. Sometimes I help her by doing computer lay outs for edible photos which she mounts on specialty cakes. She hastes waste, so whenever there are off cuts, she does the best she can to try and find a home for them, Yesterday it was my turn to oblige!

Well, we ate a few on their own and then I decided to try making some old fashioned truffles. I haven't done this in years, but my gran used to make them a lot. One of the characteristics of the kitchen in those days was that you made the best of what was available to you at any given time and nothing was ever wasted.

Now, I'm not one for doing a lot of food photography, but these truffles seemed to work on so many levels. In fact, the whole philosophy behind their creation isn't too bad either. So here they are. Making the most of left over cake truffles...

Pity I had to eat one for the purpose of the photo. Not!

Recipe can be adapted to suit but basically;

2 cups of cake crumbs
2 tablespoons of drinking chocolate / cocoa powder
2 tablespoons icing or confectioners sugar
2 tablespoons of alcohol of some description
1/4 cup of other bits and pieces such as nuts, dried fruit, coconut, chopped marshmallows or chocolate nibbles.

Chocolate, drinking chocolate, icing sugar, dessicated coconut or just about anything else you can think of to coat.

Mix all the dry ingredients together and add liquid until they come together as a soft ball. Allow to rest for a bit and then divide up into bite sized balls before coating. If you can, wait until the next day when the coating will have set. If not prepare to get sticky!
