Lechon (roast pig)

Lechon...a word synonymous to fiestas and celebrations here in my country. A whole pig that is stuffed with herbs, spices, tamarind leaves, lemongrass or with whatever secret mixture the cook desires. Slowly roasted over hot red charcoal for hours until the skin reaches a dark shiny caramel color and crackles with a crispiness that sounds like a fresh sheet of paper being crumpled.
While waiting for our flight back home, I saw this little kiosk with a cute little piggy for a logo. They were selling Lechon from a much talked about blogger here. While on a visit a couple of years ago, Anthony Bourdain was given a taste of this and he declared it to be his best pig ever.
