Laswa (Ilonggo Vegetable Dish)
So called because "laswa" is derived from "liswa" our dialect that means "to pour boiling water over."
This dish, on the other hand, requires a clear broth of briskly boiling water for the harder vegetables such as diced eggplant, squash, and string beans to be dropped in first, and when the water boils again, the soft-stemmed herb such as alugbati be put in last, together with the shrimp and shrimp juice, seasoning and salt to taste.
Serve hot. Best with rice and fried fish.
