Tokaj
I had another memento from Hungary, this fine 1993 vintage bottle of Tokaji Aszú, the cloyingly delicious sweet wine made from grapes affected by noble rot, which comes from the Tokaj-Hegyalja, a historical wine region located in north-eastern Hungary.
This bottle contains the aszú wine proudly cited in the Hungarian national anthem. The topaz-colored wine is made from grapes that are individually picked, collected in vats and trampled to a paste, must added, then the liquid racked off into casks to ferment for several years.
The concentration of aszú has a puttony number based on the content of sugar and sugar-free extract in the mature wine. Aszú ranges from 3 puttonyos to 6 puttonyos, although Aszú-Eszencia refers to wines above 6 puttonyos. This bottle has 5 puttonyos.
I shall open it on a special occasion....
