Tablet

This morning Kerr and I went to visit the childminder who will be looking after him on a Tuesday when I start back at work. He really enjoyed himself and I have no worries at all about leaving him with her. She has two older daughters who made a fuss of him while he lapped up the attention!

We went to a friend's house for lunch as today is her birthday. I made tablet to take along for after lunch.

Tablet:
A traditional Scots sweet made from butter, sugar and condensed milk, usually cut into oblong shapes.

2lbs (800g) granulated sugar
6oz (180g) butter
1 tin condensed milk
half tin milk
half tin water
few drops vanilla essence

Put all ingredients except vanilla essence in stock pan. Bring to the boil, constantly stirring. Once boiling, continue constant stirring for 15 - 20 minutes or until a darkish colour.

Take off the heat and stop stirring. Leave to cool for 5 - 10 minutes in pan.
Add a few drops of vanilla essence and beat until a grainy texture (usually 3-4 minutes).
Pour into a greased baking tray. Score out pieces and cut when cool.

Sit back and enjoy!
