Finnish Style Pit-Roasted Roast

We went to visit my sister and her husband in Kiukainen. Here's Tero, Mirka's husband with Jarno. Tero is very enthusiastic hunter, their 3 Wire-haired Dachshund are used in hunting roe deer, venison and hare. They also have one military dog, Belgian Malinois.

Tero prepared us a very beautiful dinner, as he roasted the roe deer's roast in a sand pit. First you make a fire in a sand pit for few hours. The roast (usually moose, deer or venison) is covered in newspaper and tinfolio, then it's placed in a sand pit and covered with the sand and hot coals. Then you start a new fire. The roast is kept under the fire for 7-8 hours. This is called rosvopaisti in Finnish, it's robber roast if you translate it from word to word. It's very delicous.

We had a very nice time tonight, soaking in their wooden tub outside for hours, having some beer & dry cider.
