The Jarvis has a keen appreciation of history, and prefers places that have a long tradition of imbibing. New bars are almost by definition anti-Jarvis, unless they happen to be be tasteful reworkings of once-grand old bars that have fallen into a period of anti-Jarvisness, aka decline.
