Mushroom Soup
Today's the day ...................... to warm yourself up
A miserably cold and grey day here today - but I've got just the thing to warm the cockles and give you lots of immunity-boosting vitamins B and C at the same time.
Ingredients
1.2 litres vegetable stock (I use bouillon powder)
225g potatoes (peeled and diced)
110g mushrooms (finely chopped)
½ tsp dried oregano
1 small onion (finely chopped)
50g unsalted butter
1 heaped tblsp flour
Method
Bring the stock to boil in a large saucepan and add the potatoes, mushrooms and oregano. Adjust the heat to a simmer and cook until the potatoes are tender for about 30 minutes.
In another large saucepan, gently sauté the onion in the butter. Sprinkle on the flour, stir until well combined and continue cooking for 2 minutes.
Add the soup to the onions one ladleful at a time (to avoid lumps) stirring constantly, then simmer, stirring until slightly thickened.
Whiz in a food processor or blender until smooth.
It's such a tasty soup - and made from so few ingredients that it's a bit of a miracle! You can add cream at the end if you want - but I think it's quite creamy and thick without it.
