gilt head bream on Mr Moxon's slab, Clapham
Check for small bones. Then try pan-frying fillets in butter and a little oil, skin-side down, and then flip over for a minute or so on the flesh side. Excellent with a green sauce and fennel, braised or sliced in a salad.
