Hours before a restaurant opens, the kitchen staff are busy preparing the evening meals. Here I'm peering into the world of Thistle Restaurant & Bar. They won the Oregon Best Restaurant of the Year award in 2011 and have been written up in the NY Times. Excellent choice for some very good food.
