Green Tomatoes

Green tomatoes, now turned into green(ish) tomato chutney.
Some of them have turned red since I collected them nearly two weeks ago.
I picked the last of them yesterday, just as well as the plants have now been submerged by stormy seas.

Such delicious words for a wild day
Chopping
Simmering
Shallots
Spices
Golden raisins
Wine vinegar
Edit: forgot to mention soft brown demerara sugar, and sel gris - thanks to Arachne for reminding me

Yield four jars and the house smells divine.
