Orange Carrot Loaf
Finally, I got to use Anna Olson's cookbook that I got when I visited my friend in Halifax back in July. We went to a seafood festival, and she happened to be there demontrated cooking...so I got her cookbook and she signed for me too!
This recipe is definitly a keeper. Many times in the past when I baked banana breads or quick breads...the texture ended up not quite right for me. This one is crusty outside and soft and moist inside! Perfert! However, I would reduce the amount of sugar a little bit (even tho she said that it's something sweet but not too sweet) and add some nuts or pineapple. I hope that when I reduce the amount of sugar, I will still get little crusty outside. Well, I'll need to play around with this recipe and come up with my perfect recipe for the carrot loaf (cake)...
PS. It's March 1 now...coming close to the end of my winter food project. So far, I have made 30 recipes out of 53 recipes...so I have 23 recipes left that I need to make in 21 days or so...oh...gee...
will I make it?...we will know soon...
