Late blooms
The Jerusalem Artichokes are flowering. They can also be called sunroot, sunchoke, earth apple or topinambour, a species of sunflower native to eastern North America. Topinambour is the name used in Poland. The tubers can be scrubbed and eaten rather like potatoes. Some diabetics like to eat them since they reduce blood sugar, so I'm told. They contain inulin rather than starch. D made some soup from them last year which was better than expected.
The dried plants can be used as a fuel source as they yield a high biomass. They are also a pernicious weed. Some are over 3 meters high this year. These flowers were at a lower altitude, so I blipped them.
