A carrot and a half

I went out to the garden just before dinner last night to pick a carrot for salad, and I was astounded when I had to wrestle this one out of the ground! With both hands! I've never seen such a huge carrot. My peeler will be able to handle this, but I'm not sure my little paring knife will! I knew I'd blip it today so I didn't add any to last night's salad. Now I'm wondering what it will taste like.
And the wrestling reminded me that it's time I started lifting weights again. Geez, a carrot almost got the better of me!
