Dragon's beard candy

On the way through Chinatown I spot this lady making special sweets for New Year.

They end up looking like a stringy cotton wool balls but start out life as a lump of sugar and honey.

Using corn and rice flour to stop the strands sticking the chef pulls and twists the paste until the strands become like yarn.
