Microwave jam!
More BlackBerrying and more jam. What a good year for fruit!
For Mothership - here is how you do it
Weigh any soft fruit - (I have made gooseberry, strawberry, raspberry, blackcurrant etc. - you can use frozen fruit too) but must be 1pound or less. (Or it will boil over!!)
Put in large microwaveable bowl with same weight of ordinary sugar and the juice of 1 lemon per 1/2lb of fruit .
Zap in microwave on full for 5 minutes.
Stir really well to distribute sugar
Zap 5 mins again
Stir really well again
Zap for 5 mins again
Test for setting - use saucer and finger test - you are looking for wrinkles!!
Zap for 3 mins and test until set. Put in little jars and eat
Simples!
For less than half pound of fruit zap for a little less time. For plums I do not add the sugar until after the 1st 5 mins so they can cook well first.
