Huevos Rancheros - are we in Texico?
Huevos Rancheros: I first had these in San Antonio - only a stones throw away from The Alamo where Davey Crockett made his last stand.
A great breakfast.
There are lots of variations but this was sautéed onions and garlic with grated potato, fried tomatoes, sliced olives, two fried eggs, some parsley and of course lots of Tabasco sauce. Two sausages thrown in too. Washed down with fresh coffee. Certainly a Tex / Mex flavour.
(I only eat it once or twice a year)
