The Big Cheese
This is a real handmade, unpasteurised Somerset cheddar, from Montgomery's Cheese farm near the magical Cadbury Castle.
We had a talk on this subject at our WI meeting tonight, and were able to sample (very generously) three of the famous cheeses. The cheese has been made on the farm since 1911, in the same family.
The quality of the cow's bedding, their food and even their water is closely monitored as this affects the texture and taste of the final product.
But demand outstrips supply (they make about 120 Cheddar cheeses each week) so the cheese is not so easy to find! Some goes to France, some to the US, but it can be found in specialist cheese shops in Bath and in London.
