I live in one of the best fruit growing areas in the world. This has been a particularly wonderful season with beautiful peaches, cherries and now apples. But, there's only so many fresh peaches you can eat so I'm feeling very proud of myself for canning 21 jars of peaches today. It is wonderful to be able to open a jar of peaches in January and they taste almost as good as fresh. I hardly add any sugar so they are completely different than store bought cans that are sickly sweet.
