Apricot coffee cake
One of my favourite things about Prague is that at almost every metro station, almost every day, there is someone selling fruit. Yesterday I picked up some apricots at Namesti Miru and this morning decided to turn them into an Apricot Coffee Cake. My recipe was based on one by Chocolate & Zucchini. However, in true AussieinPrague fashion, I found myself unable to follow the recipe to the letter. So for the cake base - well, instead of milk I substituted Amaretto. Then the topping was meant to be made with creme fraiche, but I didn't have any so I used tvaroh. I also doubled the amount of topping, and flavoured it slightly with some more Amaretto. Unfortunately the apricots weren't as tasty as I would like, but overall it was pretty good. Next time I'm going to try it with rhubarb! I took some to one of my students, Petr, and he thought it was pretty good. I thought it was pretty good that I was able to get a large chunk of it out of my kitchen. Much of it is now in the freezer ...
Summer seems to be visiting us again - no rain today, sunny skies and the temperature at 6.21 pm is a delightful 24.3 degrees.
I do love Prague :)
