So I have been doing this for a while now but today just felt likens should share the goodness. I'm super picky about my bananas. I like them very firm and just off green. But when they have got past that stage (only by a wee bit) and do not pass Laura's banana test, I choose them up and freeze them. They are seriously so delicious! And because of the texture of a banana they never go fully hard and are just like banana sorbet. Mm mmmm! When they're frozen, they're so sweet, you can keep them for as long as you want and can even make the best banana cakes when you un freeze them again! Just thought I'd share my fave little trick for the moment. Try it- I'm sure you'll enjoy.
