New steel
So after 16 years as a chef five finally gotten round to getting an good knife. Now there are many fine and excellent knife makers out there but I have a particular like for things Japanese. I can honestly say this is the sharpest knife I've ever used, and if I'm honest I'm a little scared of it. Will test drive it all this week and hopefully fall in love with it
