Changing up Brekkie

So, I read in the Greatest Daily (.com) newsletter, that Breakfast Salads are a great way to boost nutrition for the day. Sooooo, thought I'd give it a try.

Sauteed baby broccoli, mushrooms and scrambled eggs (all made with my new fave, Smoked Paprika) over a bed a fresh greens, tomatoes, green onions and carrots. The lightly cooked vegetables added plenty of flavor, so no dressing was needed.

Wow! Did I feel pampered...even if I did cook it myself!
