Parkin - my version

A week ago Paladian caught me out baking my first ever cake and blipped it here! The cake needed to be left to mature for a week, and today was the unveiling. Parkin is an old-style Yorkshire cake. Being regional it is not very well known outside Yorkshire.

Paladian's verdict, excellent flavour and bake. Delicious!
Maybe I will try something else in the near future. Nothing like being a late developer!
