About the easiest "exotic" dish I know. Indian scrambled eggs.
Some fried red onion (diced first). Some sliced green chilli and roughly ground black pepper thrown in for a couple of minutes after the onions are brown. A couple of diced tomatoes go in after that, and they cook for a few minutes until like jam.
Then 3 beaten eggs. When the eggs are almost cooked, a teaspoon of toasted ground cumin and a bunch of chopped coriander. I serve with a toasted pitta, sliced.
Cheap. Healthy. Quick. Easy. Full of flavours.
