Huevos Rancheros

Once when we were driving back from La Jolla to LA we stopped at at little place by the road for brunch. It didn't look much from the outside but we had the best huevos rancheros ever. This meal has now achieved mythical status and once or twice a year I get the urge to try to reproduce it. Which I never quite manage.
