Paul McGlynn

Paul is an oyster farmer who also owns The Oyster Shed at Carbost, Skye. You will find it just round the corner from the Talisker whisky distillery. What a combination in the same village.

Paul has been running the eatery for three years and the number of visitors is growing. Its not surprising when you can sit on a bench, eating his home made fish soup from a cardboard cup with a plastic spoon overlooking the loch. Fantastic.

He says he has no intention of enlarging the car park and doesn't want to get any bigger. No chance - there was grid lock up the lane and it is only May. He has a jiot on his hands.
