Skillet
Mum's sister-in-law gave her this cast iron skillet, which she bought in Canada. It's a demon when it comes to frying; it doesn't do gentle warmth and you have to keep a close eye on it to stop things sticking and burning - plus the handle gets too hot to hold without a cloth. But if you want a great big whack of heat, for instance when you're searing meat, then this definitely does the job.
Today I'm frying courgettes, garlic and onions in it to make a cheese and courgette quiche, which I'll leave for Mum to have after I go back home. And yes, you've guessed - it's a Delia again: Delia's Cookery Course, page 90 in the three-part edition.
