Freeze drying?

I have never understood how this works.. Hairdressers here hang their towels out to dry on a string across the footpath.

BUT.. it's -19 in this pic.. How does that work.. I have been informed that the ice evaporates.. but I am not so sure.. mebbe have to hang the Y-fronts out the window to try it.
