Coriander Chicken Salad

Haven't had this in a while, coriander chicken. Tonight I fried it in olive oil as opposed to butter, and when I tossed the chopped coriander in, it was like lighting the blue touch paper and not standing back. Ouch! In the end it turned out great. Half way through eating we realised we usually serve it with a tomato, red onion and lime salsa. Oops !
