With the taste of home - con sabor casero.

On the advice of a colleague and friend from work, I tried a small Mexican restaurant called La Fondita for lunch today. The chef and owner, Cuahutemoc Lopez-Pozos (he goes by Juan), graciously let me back into his kitchen where we laughed a little and he showed off his knife skills. Juan is a native of Guerrero, Mexico and said he has a real passion for cooking.

I tried the Enchiladas con Mole Oaxaqueno , which were excellent! A deep, dark red and perfectly rich mole made from nuts, chili peppers, various seeds & spices and chocolate, had just the right kind of heat in my mouth. So good.

I will definitely return to try other dishes and continue my conversation with the wonderful chef! Thanks for the recommendation, Greg!
