We have sap! Lots of it. One of our trees is quite a gusher. Picture is of the tap in our maple tree with the bag removed for emptying, drip-drip-driping. I tasted it, but it didn't taste of anything much.
I've discovered another way of identifying maple trees (or at least trees in which the sap runs) - if you've had deer eat the lower branches (and we do!) then the cut ends will be wet and sticky.
We have dug holes in the snow to store our buckets of sap - hope we don't lose them the way Nutsy loses his nuts.
