White Chocolate Cherry Shortbread

These were probably one of the best cookies we made to date. The shortbread factor didn't really mean that they were crumbly. The cherries kept the cookie moist and sweet. The color was an added thing, we ended up using food coloring to make the cookies pop. Savory and sweet, these cookies were a great success.
Our Advice: Be sure you thoroughly dry off the cherries. Any added liquids will mess with the consistency of the cookies. And be sure to have a damp paper towel ready, your fingers will turn red while you're chopping the cherries.
