Yes it's a Cow's ass sticking out of a wall on the Cowgate.

Like seeing who hides under a bench when the One o'Clock gun goes off from the Castle, seeing who stares at the udders is a sure fire way of discovering which people have been wandering down this part of Edinburgh before and who has just arrived in town.
