Sweet Pepper Hummous
1 sweet red pepper roasted in olive oil
1 can of chickpeas
1 tsp tahini (or a handful of toasted sesame)
1 handful of almonds
1 Lemon juiced
2 tbsp olive oil
Blend until you have the consistency you want. Season to taste. Leave overnight in the fridge to marinade.
I usually add a 1/2 clove of raw garlic, but this is a sweet mild hummus and garlic is a little too strong.
Serving suggestion: with anchovies and warm pitta bread.
