Rhubarb Jam
I'm guessing British-grown rhubarb is forced at this time of year rather than grown naturally outside, but still - better than being shipped from a distant land! This is the beginnings of a couple of pots of (delicious) jam I made with a bunch of Yorkshire rhubarb I picked up in town, which were so bright that the end product turned out almost neon-pink. It was great served with homemade Welsh cakes and vanilla cream on St David's Day!
