Pink Lunch

I try to make my own lunches for work and not rush out and grab a snack that is bad for me. My recent efforts have been to make up a tub of healthy stuff to eat. At the base is beetroot (vacumn packed not pickled), then leeks, shallots, peppers and mushrooms stirfried with spray oil and cold tea (no milk!) steamed salmon fillets and topped with rice noodles.

Microwaved at lunchtime for 2mins 30 seconds, then tipped upside down into a dish. This means that all the juices from cooking the veg and the beetroot juice run down into the noodles and veg turning it all pink.

Looks weird, but tastes bloody fantastic :)
