Homage to Damien Hirst

Amazing dinner at Osteria Francescana in Modena. We went for the twelve course experimental menu. This is sous vide beef - tender enough to cut with a spoon - with beetroot, cauliflower and pea (possibly, I can't remember) and horse radish. Quite an experience.
