Edible Play-Do

Posho is a staple here. Its maize flour boiled and mingled (stirred) until it becomes the consistency of Play-Do. It's then chunked onto your plate and scooped into beans for any/most/all meals. It's the 'PB&J' of East Africa.

We're staying at a school in Kitgum that feeds all TWO THOUSAND of their students porridge in the morning and beans with posho in the afternoon.

I've mingled posho before, in a household-sized pot, and it takes all kind of muscle and determination. I cannot fathom mingling THIS pot of posho.

I stood and watched this guy for way longer than what I deem as socially ok. I couldn't help it; I am in awe.
